Champion is sweet with just enough acidity to stay lively, with medium-firm flesh and large fruit. In this group, it is one of the sweeter, lower-acid choices. Choose it for jelly, paste, poaching, and all-purpose kitchen quince work, but skip it if you want fresh eating straight from the tree or the most intensely aromatic quince varieties. It usually ripens around late October, in the middle of this group.
