Black Satin is tart-forward with sharp acidity, with firm, dense flesh and medium fruit. In this group, this brings more acidity and bite than most of the others shown. Choose it for jam, baking, and mixed harvests where some tartness is welcome, but skip it if you want fresh eating where sweetness is the priority - Black Satin is noticeably more tart than the best sweet varieties. It usually ripens around mid July to early August, earlier than most of the others shown.
